Smoked Turkey, Watercress & Baby Gem Lettuce Salad

Shopping list

  • ½ Red onion, finely sliced

  • Squeeze of fresh lemon

  • 20ml Extra-virgin olive oil

  • 1x Pack of Mattessons Turkey Rashers

  • 1x Baby Gem, leaves separated and cut in half

  • 50g Watercress

  • 1x Braeburn apple, cored and finely sliced into half moons

  • 40g Pecans, lightly toasted and roughly chopped

Directions

Put the onion, baby gem, watercress and sliced apple in a mixing bowl. Set aside.

Heat a chargrill pan (or normal pan if you haven’t got one) and chargrill the Turkey Rashers until cooked through.

Drizzle the olive oil and squeeze the lemon juice over the leaves in the mixing bowl, toss together so all the leaves are coated.

Lay the dressed leaves and apple pieces on a plate.

Slice the cooked rashers, dot them over the leaves and sprinkle the pecan nuts over the salad and serve.
