Sausage, Potato & Jalapeno Hash

Shopping list

  • 2x large potatoes

  • 1x Sweet Potato

  • 1x tbsp olive oil, pus extra

  • 1x Mattessons Smoked Pork Sausage – Sliced in to coin shapes

  • 1x onion

  • 2 garlic cloves

  • A pinch of cumin seeds

  • 1 tbsp Jalapenos from a jar

  • Handful of fresh Coriander

  • 30g cheddar cheese

  • 3 Eggs


Peel and chop both sets of potatoes into 1-2cm cubes.
Set aside the sweet potatoes and add the standard potatoes to a medium sauce pan, cover with water and put on to boil.
After boiling for 5 minutes add the sweet potato and cook until tender.  

Whilst the potatoes are cooking:

Slice the onion and crush the garlic.
Heat a large ovenproof frying pan, add the oil and fry the cumin seeds briefly for 20 seconds and then add your sliced onion and garlic cooking gently for for 5 minutes.

Add the sliced sausage and cook for a further 5 minutes until browned and coloured.

Drain the potatoes, leave to stand to dry out fully for 1 minute and then add to the frying pan and cook for 5 minutes, turning occasionally. Heat a grill to high. 

Chop, then stir through the coriander and add the jalapenos, coarsely grate over the cheese and crack three eggs onto the top . Then put it under the grill for 5 minutes until the eggs look cooked and the cheese is melted.
