1x Mattessons Smoked Pork Sausage – sliced in to coin shapes
½ Large red onion cut in to chunks
1tsp Olive Oil
½ Yellow pepper cut in to thick slices
*½*Red pepper cut in to thick slices
375g Pack ready rolled puff pastry
3 tbsps Sweet American mustard
Sprinkle of dried oregano
Heat oven to 200C/fan 180C/gas 6.
Put the onion and peppers into a bowl, drizzle over the oil and toss well.
Unroll the pastry directly onto a large, flat baking sheet. If the pastry sheet is lightly too big, just slice off the end to fit.
With a sharp knife, score a border inside the pastry, about a thumb width from the edge.
Spread the mustard over the pastry, keeping within the border, then scatter over the sausage chunks, onion and pepper mix.
Season to taste, then bake for 15-20 minutes, until the sausage is cooked through, the onion and peppers are starting to look roasted and the pastry edges are well puffed and golden.
Cut into slices and serve with salad.
