1x Mattessons Smoked Pork Sausage with Garlic cut into chunks
1x Red pepper cut in to wedges
1x Yellow pepper cut in to wedges
1x large red onion cut in to wedges
500g baby new potatoes – cut in half
Drizzle of oil
Preheat the oven to 180’C
Take a large roasting and drizzle with oil.
Add the peppers, potatoes and onions to the tray.
Roast off the vegetables in the oven for 15 minutes.
Take the tray out and add the Smoked Pork Sausage chunks to the tray mixing well together.
Return to the oven and roast for a further 10 minutes or until potatoes are soft and everything is cooked.
Drizzle with BBQ sauce and serve
